Hoja Santa Purée (Puré de hoja santa)

This is not a traditional Mexican basic but it is the base for several dishes I make and will soon post. You can substitute cilantro or Italian parsley for the hoja santa.

Ingredients
  

  • 1 teaspoon salt
  • 1-2 cloves garlic peeled
  • 1 jalapeño chile coarsely chopped
  • 3 large hoja santa leaves torn into pieces
  • ½ cup extra-virgin olive oil

Instructions
 

  • Place the salt and garlic in food processor and process until ground.
  • Add the chile and process until well combined
  • Add the hoja santa, a little at a time, and process until puréed.
  • Add the olive oil in a thin stream.
