This is not the least caloric French toast you will ever have but It is definitely worth it.

10 slices raisin bread

10 eggs, well beaten in large bowl

2 cups sugar

2 tablespoons vanilla extract

4 cups half-and-half

Softened butter

Confectioner’s sugar

Fresh berries

Fresh mint


Preheat oven to 375 degrees F.

Place eggs in the large bowl of your electric mixer and beat until thick and light lemon -color.  Add sugar and vanilla and beat until thoroughly incorporated. with the machine running on low speed, add the cream in a thin stream until incorporated.

Butter the bread and place half, buttered side down, in 13 X 9-inch Pyrex dish. Ladle enough egg-cream mixture to just cover the bread.  Arrange the remaining bread, buttered side up on top and ladle remaining custard mixture over until 1/2-inch from the pan.

Bake, uncovered, for 45 minutes ir until knife inserted in center pulls out clean.  Let rest for 10 minutes.  Cut into 8 pieces. Place each serving on plate; dust with confectioner’s sugar.and sprinkle with fresh berries. Berry or maple syrup definitely optional.
