I’ve read and heard that guacamole is now the most popular Super Bowl dish and you can learn to make it by watching my video, but I am sure that’s only because they haven’t tasted my queso fundido with home-made chorizo! It is so easy to make and is packed with flavor. All you have to do is put shredded white cheddar or mozzarella cheese in an oven-proof container, top with about a cup of homemade chorizo and place in a 375° degree oven until melted and bubbly. Take care that the chorizo does not burn. Some people like to add slices of pickled jalapeño. I always serve it on freshly made flour tortillas but you can use commercial ones if you don’t have the time or inclination to make them..
Or if you want to serve a crowd, you could make some delicious pozole. It is easy to make, easy to serve, and easy on the pocket book and a one- dish-meal.

Anothr crowd-pleaser are meatballs in chipotle sauce. Canned chipotles in adobo are now available in most supermarkets so there’s no need to worry about special ingredients.
My go-to appetizer is hearts of palm puree. You can make it in 5 minutes and it’s a light and healthy alternative to calorie-laden dips.
And of course, salsa is a must.
