Though this summer in New York has been relatively mild, the humidity can make cooking less fun and , on days when the thermometer is supposed to hit the mid-90’s, the thought of turning on the stove , much less the oven, in my small apartment kitchen seldom enters my mind. Instead I turn to several recipes that are simple to prepare , nutritious, and that require no ingredients that you could not find in your local supermarket.
