What to Eat When It’s Too Hot to Cook, Part 1

Though this summer in New York has been relatively mild, the humidity can make cooking less fun and , on days when the thermometer is supposed to hit the mid-90’s, the thought of turning on the stove , much less the oven,  in  my small apartment kitchen seldom enters my mind.  Instead I turn to several recipes that are simple to prepare , nutritious, and that require no ingredients that you could not find in your local supermarket. Above is my favorite go to appetizer when unexpected company arrives or I’m in a hurry: Hearts of Palm Dip

A new favorite is Spicy Pineapple salad

Another good option is this delicious Tomatilo-Avocado Sauce to eat a is or mix in cubes of queso blanco or small boconccini of mozzarella.
